Marc DeMarchena

Prior to joining the faculty at Johnson & Wales University, Professor DeMarchena managed food & beverage operations at a variety of hotels, national parks and inns across the United States.
His teaching focuses on a broad range of beverage topics across the beer, wine, spirit and non-alcoholic beverage sectors. Introducing students to the worlds of coffee and tea, he provides students of different majors the ability to plan future entrepreneurial and career initiatives. Marc also spends time teaching Culinary and Pastry students the key elements of menu planning and cost control.
Additionally, he teaches the Wine Spirit Education Trust courses and food and wine pairing lessons to the local learning community which provide certifications or fun for the interested beverage consumer.
In addition to his College of Food Innovation & Technology responsibilities, he acts as a consultant through MADWORKS, providing event planning, restaurant consulting and excellence training.
